Home Canned Sweet And Sour Pickled Red Onions ~ Small Batch Canning

2 c. apple cider vinegar
1 1/2 c. Water
3/4 c. sugar
2 T. pickling salt
3 lbs. red onions, trimmed and thinly sliced
2 t. mustard seed
1 t. celery seed
1/2 t. red pepper flakes
Use tongs to evenly divide onions among your jars. Ladle hot brine over onion slices in half pint jelly jars or pint jars, leaving 1/2" headspace. Wipe jar rim. Center lid and apply band to fingertip tight.
Process 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    I bought litmus test kit. It tells you exactly how acidic your recipe is. To safely water bath can tomatoes and tomato based recipes your acid level must be below 4.6. I add acid until my recipe is no higher than 4.3.

    In 2022 I made my very first batch of cowboy candy. I was not really big on jalapenos so I gave away all but 1 jar in gift baskets for Christmas. Everyone loved it and asked if I had more. I opened the one jar I had left in May for some sheet pan nachos I was making for friends. I tried the cowboy candy and could not get enough of it! It was so good! When my garden started coming in I had a couple of jalapeno plants and was going to make more but could not find the recipe. I do believe this video is the recipe I followed. I have 12 plants that are absolutely loaded with jalapenos so I am going to use this recipe and make as much as I can, thanks for sharing!!!!!!

    Carol did you heat your jars up in the steamer. I have the same pot and I’m a little confused when it comes to the steam canning.

      It doesn’t matter how you heat them as long as they are hot but you can hear them in your canner

    I am using this recipe for bread and butter pickles. Do I go by the written measurements since the video uses different measurements for the vinegar and sugar?     As a side note, I did do a few test runs a few years ago, using only beans, canning salt, and water and my beans came out of the canner with about 15% water on the top of jar. That settled down over a few weeks and the beans continued to absorb water until there wasnt really any left. It was a thick. When I opened a jar, the beans were mushy. I would really love it if a canning expert like you can test run canning beans with calcium chloride and show us the results. Elizabeth M.

    Carol I have been looking for information about all the different ways I could keep my pickled onions crisp instead of mushy. They are good the first day or 2, but after that they tend to slowly turn too soft. There is a product called Ball Pickle Crisp Granules and also Mrs. Wages Xtra Crisp or something like that. It is calcium chloride. This product also works on vegetables, dilly beans, giardineria, etc and I have also heard it is an ingredient in commercially canned beans such as navy, great northern, cannellini, small red, red kidney, pinto, black beans, etc and is used to help the beans hold their shape under pressure canning. I wonder if you could experiment for us and post the video and results on your UA-cam channel? Try Pinto beans first. 1/4 teaspoon of calcium chloride per quart jar of beans to be canned, 1/8 teaspoon per pint of beans to be canned. I would love to see any other results you find for other vegetables as well. Elizabeth M.
